ABOUT THIS MEAL
The star of "Mofongo Sunday" will definitely be the delicious mofongo, a garlicky fried plantain many times paired with soups and stews.
For some history, mofongo from Puerto Rico, mangu from the Dominican Republic, and machuca from Central America all have it's roots in Africa. You can compare it to fufu from Nigeria and Ghana and you will see that they are an interpretation.
ON THE MENU

Ensalada de Pulpo (Octopus Salad).
